Recipes I've Been Loving Lately :: Summer Inspired Eats

We’re going on the third month of quarantine and only some parts of the country have just started opening back up (AKA: takeout and homemade recipes on repeat). So, we’ve been getting creative in the kitchen! I love having a little bit of extra time (and excuse) to cook. When researching recipes, I usually scour Pinterest, ask for recommendations from friends / family and, of course, I have my normal food blogger favorites. There are a couple of recipes I’ve been loving lately, and I felt the need to share the taste-bud LOVE.

Magnolia Table Chocolate Chip Cookies. And you thought Joanna Gaines’ decor skills were good. TRY THESE CHOCO CHIP COOKIES. George said they were my best yet. Seriously drool worthy.

Crispy Lemon Feta with Spiced Chickpeas. THIS. RECIPE. This recipe is definitely on the top of my list. If you’re ever craving something Greek inspired, this Half Baked Harvest recipe is for you. Feta is one of my absolute favorite foods in the world, so FRIED feta is amazing. The lemony, garlic Greek yogurt spread and all the veggies. DELISH.

Summer Strawberry Spinach Salad. When I’m feeling something fresh and simple, this is my go-to. Sometimes I’ll add coconut for a little extra flavor!

Coconut Mango Chicken Meal Prep Bowls. Sometimes batching recipes helps me get through the week without as much meal planning anxiety. The mango salsa recipe is what caught my eye - it’s so perfectly summery!

Healthy Granola Recipe. My BFF turned me onto Cookies and Kate and OH MY WOW. I will always make my granola from scratch with this recipe. Pecans, granola, coconut, OH MY! It makes a rather large batch, so you can easily freeze and eat later.

Clayton’s Grapefruit Margaritas. Some friends recommended Defined Dish’s margarita recipe to us. The trick? Adding egg whites to make it frothy (almost like a pisco sour)! I substituted grapefruit juice for grapefruit flavored Spindrift because I love the extra sparkle. Salud!
