Chocolate Chip Bourbon Pecan Pie :: A Holiday Tradition
My family loves to cook. And even more … we love to EAT. My mother has been baking chocolate chip bourbon pecan pies for holidays since before I can remember. She usually has to bring TWO to our family gatherings. Her pies are the first to get gobbled up. And now this dessert has become a part of our holiday tradition. I’ve adopted her recipe as my own, and it has become of my favorite desserts to create.
If you’re looking for an easy and delicious dessert recipe? This is it. This particular pie recipe is for the chocolate lovers and bourbon lovers out there. You can add a little more bourbon if you enjoy the taste or a few extra chocolate chips if you’re answering to a sweet tooth. This recipe is shockingly easy, if you’re looking for something less involved (but just as delicious).
Texas Chocolate Chip Bourbon Pecan Pie
Ingredients
1 cup corn syrup
3 eggs, lightly beaten
Pinch of salt
1 teaspoon of vanilla
1 cup sugar
1/2 cup butter (melted)
1 Texas-sized cup of pecans, pieces or halves
1/2 cup semi-sweet chocolate chips (you can add a little bit more if you love chocolate)
3 tablespoons of bourbon
1 unbaked 9-inch pie shell
Instructions
Pre-heat the oven to 400 degrees.
Add your pie crust (works best at room temperature) to a pie plate and pinch the edges (#aesthetic).
Combine all ingredients in a large bowl and whisk together. Pour into pie shell.
Bake 15 minutes at 400 degrees. Reduce heat to 350 degrees and bake 30 minutes more.
To determine readiness, make sure the center of the pie doesn’t jiggle too much. The crust should be a golden brown!
Let cool.
BONUS: Add a scoop of BlueBell vanilla ice-cream on top.
